Chicken and Broccoli Oven Stew

Ingredients:


4 medium chicken breasts, cup into bite-sized cubes

4 cups chopped fresh broccoli or 3 (10-oz.) packages frozen broccoli

1 1/2 cups shredded sharp cheddar cheese

1 cup heavy cream

1/4 cup water

1/8 teaspoon cayenne pepper

1 teaspoon salt
 

Preparation / Directions:


Heat the oven to 325 degrees. Grease a 9x13 inch baking dish with cooking spray, olive oil or butter. After cutting the chicken into bite sized pieces, lay the chicken evenly across the bottom of the baking dish. Next, sprinkle the shredded cheddar evenly over the chicken. Lay the broccoli over the other ingredients in the dish. Set aside. In a small bowl, combine the cream, water, pepper and salt. Pour this mixture evenly over the chicken and broccoli. Cover the dish with either a lid or with foil if necessary, and place it in the oven to cook. Bake for 1 hour. Remove the baking dish from oven and uncover. Gently stir to evenly mix the sauce and place in a tureen to serve. If the sauce is too thick, add a small amount of hot water or extra cream. To make a nice presentation, sprinkle the top with additional shredded cheddar.
